MALMADURA, THE INEBRIATING LYMPH
The barbarian stares at the wine people harvesting the unripe grapes, slashing over the smaller bunches in order to make room for the biggest and plumpest. He walks among the rows and picks up those innocent fruit reduced to waste, bearing in mind the clear project of turning them into an inebriating lymph: Malmadura is born, an extreme beer, intensely sour and refreshing, a drink for the few.

The snifter (or baloon or napoleon) is a glass from the goblet family, historically used to serve liqueur wines or spirits. Structurally it is a glass of limited capacity (maximum 250 ml), with a wide foot, short stem and a rather reduced thickness: these features mean that the heat of the hand in contact with the glass favors the release of the more volatile aromatic components. These are conveyed to the mouth by a marked narrowing of the glass. For these reasons the glass lends itself very well to accepting complex alcoholic beers with moderate foam which are not afraid of oxidation phenomena, such as barleywine, doppelbock, eisbock and old ale.

A 3.5% ABV unusual beer brewed with the 25% in weight of unripe Marzemino grapes from Trentino (“Malmadura” is the local dialect word for “unripe”) added to the wort together with their sprigs.
Astringent, green and extreme, it is inspired by agresto, a medieval seasoning which used to be made from green grapes. Sour and tannic, fresh and astonishingly aromatic. A beer for the few!
Pairings
Ideal setting: A meditation beer notwithstanding the moderate ABV, Malmadura is best enjoyed by its own on sunny days, armed with the firm intention to fully understand its secrets.
Food: Generally hard to pair, Malmadura still has a precise range of dishes it fits like a glove: stewed eel, Peruvian chicken heart anticuchos, baba ganoush, wild strawberries.
